Palmier

Sometimes I want to let my kids taste what I had younger and that is not accessible or too expensive here. I wanted to try the Palmier but I was not ready to make a homemade puff pastry dough. Sometimes you got to do what you got to do lol. I just did one sheet because it’s enough for a make together snack with the kids. You can see on my image that it’s not evenly caramelized. Just be sure that you have evenly spread the sugar on the puff pastry.

Ingredients

  • 1 sheet Puff pastry dough (homemade or market)
  • 1 cup Granulated sugar
  • 1/4 tsp Salt
  • Optional: vanilla sugar

Method

  • Preheat the oven at 450 F
  • Combine the sugar, vanilla sugar and kosher salt. Pour 1 cup of the sugar/salt mixture on a flat surface.
  • Unfold sheet of puff pastry onto the sugar and pour 1/2 cup of the sugar mixture on top. Pressed the sugar into the dough.
  • Fold them again so the two folds meet exactly at the middle of the dough.
  • Freeze for about 30 min.
  • Slice the dough into 3/8-inch slices and place on baking sheets lined with parchment paper.
  • Bake for 12min or till caramelized color – return them when half way
  • When caramelized both side, take out of the oven and place on a rack.

I think that 10min later – we had just 1 palmier left. I think it was a success for a afternoon snack like I used to have when I was younger.
