Clafoutis

The cherry can be replace by any fruits that you feel of. It’s almost end of cherry season and I wanted to celebrate this fruit for a last time. This is not the original recipe I’d a clafoutis but replacing milk by coconut milk ans sugar by condensed milk seems more than fine with my Caraïbbean background. You will know that I love that recipe with those.

Ingredients

  • 2/3 cup condensed milk (150ml de lait concentré sucrée)
  • 1/2 cup coconut milk (375ml lait de coco)
  • 1/2 cup Flour (125ml de farine)
  • 3 tbs old rum (3 cuillère à soupe de  rhum vieux)
  • 1 tbs vanilla extract (1 cuillère à soupe d’extrait de vanille)
  • 3 eggs / oeufs
  • 2 pounds cherry (1kg de cerises)

Method

  • Preheat the Oven 425 F (220 C). I used 2 small baking dish (5 inches) but a larger one (10inches) can be used.
  • Butter and flour the dish and place the cherries inside.
  • Mix all the ingredients together and pour it in the prepared dish.
  • Put in the oven for 30min or till fully cooked.
  • Just add powdered sugar for the decoration.
