Lemon Yeast cake

So my friend made me curious the other day with the insta yeast. I realized that I’ve never bake yeast cake like savarin or baba rum. I did it had the syrup or dried fruits so still haven’t yet done those recipes.
I adapted the lemon yeast cake from King Arthur. I took out one of egg because I feel that the cake would have been to wet and I hate those cake Added more sugar since I knew I did not want to add the syrup.
- 2 1/4 cups (262g) flour
- 2 1/4 teaspoons (7g)
- 1/2 cup (100g) sugar
- 1/2 teaspoon salt
- 1/2 cup (113g) milk
- 10 tablespoons (142g) unsalted butter, melted
- 3 large eggs
- 1 tablespoon lemon zest
Grease a 10inch fluted pan cake.
I just mixed all the recipes together and let them sit for 1hour. The mix doubled up. I dégazer it and let it sit for another 30min in the mold.
Oven 375°F than lower after 10min to 350°F till cook. ( around 20min).
I serve it with some white strawberry and homemade vanilla whipped cream. The yeast give another light sour flavor to the cake that is quite good.
I will try to make the savarin or baba rum someday/ I feel that I will like it.
